Baked Eggplant Strips with Organic Cheddar Cheese

Eggplant: one of those vegetables which you either love or don't. My hubby happens to fall under the second category..hee ;) However, as i was baking this finger food for BB, he commented that it smelled really good. After trying a bite of it, he was totally blown away & even asked for more!


1 pearled brinjal, peeled & cut into finger-thick strips
Extra Virgin Olive Oil (EVOO)
Organic cheddar cheese, grated


1. Preheat oven to 190°C.

2. Drizzle a bit of EVOO over the brinjal strips, mix well then put into oven for 5 minutes. Flip them over & bake for another 5 minutes.

3. Remove from oven & sprinkle grated cheese evenly. Return to oven & bake for another 5 minutes till cheese turn golden brown. Serve warm.
